Apple
Malus domestica
The apple is where we begin: patient, picked in late autumn, when the hills of Banat and Transylvania are left bare of fruit. A clean flavour, with a naturally cloudy appearance, exactly as it leaves the press.
01/The fruits
Meet each fruit below, with a photograph and a few lines about it. Apple and aronia juices are available now and have their own pages; twelve more juices are in development.

Aronia melanocarpa
Aronia does not give itself up easily. The berry is black-violet, small, astringent, and that is exactly why we love it: its juice is dense, ink-coloured, and tastes like nothing else in our crates.

Vaccinium myrtillus
Blueberries grow high, at the forest’s edge, and are picked with a comb, berry by berry. A juice we are preparing for next season.

Prunus cerasus
The sour cherry is sour the way it should be and red the way it should be. Its juice is the one you drink in winter, when you need to remember July.

Rubus fruticosus
The blackberry grows on brambles, at the edge of roads and woods, and defends itself with thorns. You pick it with scratched hands, which is fair: nothing good comes without them.

Fragaria × ananassa
The strawberry is the hurried fruit: it ripens in days and keeps for hours. Its juice has to be made the same day, otherwise there is no point.

Rubus idaeus
Raspberries smell of summer before you taste them. It is the fruit children eat straight from the bush, and we press it while it is still warm from the sun.

Pyrus communis
The pear is the soft fruit, the one that ripens from the inside out and must be caught on the right day. Its juice is sweet without being heavy.

Prunus domestica
The plum is the fruit of Banat, the one that becomes jam, brandy and, from now on, juice. It is sweet, dusted with bloom and patient: it stays on the tree until the frost.

Prunus armeniaca
The apricot ripens first and passes quickly. It tastes of early summer, sweet and slightly sour, and has the colour of the sunset over Altringen.

Ribes uva-crispa
The gooseberry is the sweet-sour fruit of the gardens of old: a greenish-yellow berry, veins showing, that ripens in early summer. A juice in the making, for a fruit few people still taste.

Morus nigra
The black mulberry drops from the tree on its own when ripe and stains everything it touches. It is the fruit of a country childhood, never found in shops, because it does not survive the journey.

Prunus spinosa
Sloes grow on the blackthorn, the thorny shrub at the edge of pastures, and are picked after the first frost, when their harshness softens. A wild fruit, for a juice we are still developing.

Cydonia oblonga
The quince is the last fruit of the year: yellow, hard, downy, with a scent that fills the room. It is not eaten raw, but pressed and pasteurised it becomes something else. A juice we are preparing with patience.
